- 1 cup grated carrots
- 1/2 cup chopped pecans

- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed

- 1 cup powdered sugar
- 2 tablespoons maple syrup
- 4 ounces cream cheese, softened
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Fold in the grated carrots and chopped pecans gently.
- Mix together the heavy cream and vanilla extract in another bowl.
- Add the wet ingredients to the dry ingredients and gently stir until just combined.
- Turn the dough onto a floured surface and knead just a few times until it comes together.
- Shape the dough into a triangle or circle, about 1 inch thick, and cut it into wedges.
- Place the wedges on the prepared baking sheet and bake for 15-20 minutes, until golden brown.
- Prepare the glaze by mixing the softened cream cheese, powdered sugar, and maple syrup until smooth.
- Drizzle with the maple cream cheese glaze once cooled and serve.
