Ingredients

  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 cup pineapple, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Combine the jerk seasoning and olive oil along with a pinch of salt and pepper in a mixing bowl to create a marinade.
  2. Place the chicken breasts in the bowl, ensuring they’re fully coated in the marinade. Allow them to marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat and grill the marinated chicken for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C).
  4. Prepare the salsa by mixing together the diced pineapple, red onion, cilantro, lime juice, and seasoning with salt and pepper to taste in a separate bowl.
  5. Plate the cooked chicken and generously top it with the fresh pineapple salsa.
