- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 cup pineapple, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced

Instructions
- Combine the jerk seasoning and olive oil along with a pinch of salt and pepper in a mixing bowl to create a marinade.
- Place the chicken breasts in the bowl, ensuring they’re fully coated in the marinade. Allow them to marinate for at least 30 minutes.
- Preheat your grill to medium-high heat and grill the marinated chicken for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C).
- Prepare the salsa by mixing together the diced pineapple, red onion, cilantro, lime juice, and seasoning with salt and pepper to taste in a separate bowl.
- Plate the cooked chicken and generously top it with the fresh pineapple salsa.
Notes
For deeper flavors, marinate the chicken overnight. A meat thermometer is recommended to ensure the chicken is perfectly cooked.
