Ingredients

  • 1.5 lbs chicken breast
  • 1 cup rice
  • 1 tablespoon Caribbean jerk seasoning
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with Caribbean jerk seasoning, salt, and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Add the seasoned chicken breasts and cook for 5-7 minutes per side until nicely browned. Remove from the skillet and set aside.
  5. In the same skillet, add diced onions, minced garlic, and sliced red bell pepper. Cook until softened, about 5 minutes.
  6. Stir in the rice and continue cooking for another 2 minutes.
  7. Pour in the diced tomatoes (with their juices) and chicken broth. Mix to combine everything thoroughly.
  8. Nestle the chicken breasts on top of the rice mixture within the skillet.
  9. Cover with a lid or aluminum foil and transfer to the oven.
  10. Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  11. Once done, remove from the oven and allow it to rest for 5 minutes before serving.
  12. Garnish with fresh cilantro and enjoy your Caribbean Jerk Chicken and Rice!

Notes

Feel free to substitute chicken breast with thighs for a juicier option, or use brown rice for a healthier twist.
