- 1.5 lbs chicken breast
- 1 cup rice
- 1 tablespoon Caribbean jerk seasoning
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts generously with Caribbean jerk seasoning, salt, and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Add the seasoned chicken breasts and cook for 5-7 minutes per side until nicely browned. Remove from the skillet and set aside.
- In the same skillet, add diced onions, minced garlic, and sliced red bell pepper. Cook until softened, about 5 minutes.
- Stir in the rice and continue cooking for another 2 minutes.
- Pour in the diced tomatoes (with their juices) and chicken broth. Mix to combine everything thoroughly.
- Nestle the chicken breasts on top of the rice mixture within the skillet.
- Cover with a lid or aluminum foil and transfer to the oven.
- Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
- Once done, remove from the oven and allow it to rest for 5 minutes before serving.
- Garnish with fresh cilantro and enjoy your Caribbean Jerk Chicken and Rice!

Feel free to substitute chicken breast with thighs for a juicier option, or use brown rice for a healthier twist.
