Description

A fragrant and spongy coffee cake with cardamom and cinnamon, perfect for any occasion.


Ingredients

  • 1 teaspoon Ground Cardamom

  • 4 Tablespoons Vegetable Oil
  • 3 large Eggs
  • 1/2 cup Sour Cream

  • 3/4 cup Granulated Sugar
  • 2 cups Cake Flour (spooned and leveled)
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Kosher Salt
  • 1 Tablespoon Ground Cardamom
  • 1 teaspoon Ground Cinnamon
  • 16 Tablespoons Unsalted Butter (softened to room temperature)

Instructions

  1. Make the Topping: In a bowl, combine 1 tablespoon of cardamom, 1 teaspoon of cinnamon, and 1/4 cup of granulated sugar. Set aside.
  2. Prepare the Cake Batter: In a large mixing bowl, whisk together 1/4 cup of granulated sugar, ground cardamom, and cinnamon. Add vegetable oil, eggs, sour cream, and vanilla extract. Mix until well combined. In another bowl, sift together the flour, baking powder, and kosher salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  3. Assemble the Cake: Pour half of the cake batter into a prepared baking pan. Sprinkle half of the topping mixture over the batter. Add the remaining batter, followed by the last layer of the topping.
  4. Bake the Cake: Preheat your oven to 350°F (175°C). Place the cake in the oven and bake for about 30-35 minutes, or until a toothpick inserted in the middle comes out clean.
  5. Cool and Serve: Once done, let it cool for a few minutes in the pan before transferring it to a wire rack to cool completely.

Notes

For added depth, consider substituting Greek yogurt for the sour cream, or using a mix of whole wheat and cake flour for a healthier twist. Wrap tightly and store for up to 3 days, or freeze for 3 months.
