- 2 pounds of potatoes, peeled and cubed
- 2 tablespoons of butter
- 1 cup of shallots, thinly sliced
- 1/2 cup of milk

Instructions
- Start by peeling and cubing your potatoes. Place them in a pot of salted water and bring to a boil. Cook until the potatoes are tender, about 15 minutes.
- As the potatoes cook, melt the butter in a skillet over medium heat. Add the sliced shallots and cook until they turn golden and caramelized, which usually takes about 10-15 minutes. Stir occasionally to ensure they donโt burn.
- Once the potatoes are tender, drain them and return them to the pot.
- Mix in the caramelized shallots and milk. Use a potato masher to mash everything until smooth.
- Finally, season with salt and pepper to taste.
