Description

A delicious and visually stunning dish that combines the classic flavors of a Caprese salad stuffed into juicy chicken breasts.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the diced mozzarella, halved cherry tomatoes, chopped basil, balsamic vinegar, a pinch of salt, a dash of pepper, and Italian seasoning.
  3. Cut a pocket into each chicken breast, being cautious not to cut all the way through.
  4. Stuff each pocket with the prepared mixture, pressing gently to ensure nothing spills out.
  5. Heat the olive oil in an oven-safe skillet over medium heat.
  6. Sear the stuffed chicken for about 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is fully cooked through.
  8. Allow the chicken to rest for a few minutes before slicing and serving.

Notes

For extra flavor, consider marinating the chicken in olive oil, salt, and pepper before cooking. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
