Description

Delicious cookie bars that blend the classic taste of sugar cookies with the festive flavors of candy corn, perfect for fall gatherings.


Ingredients

  • 1 Cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 2 Cups sugar
  • 2 large eggs + 1 egg white
  • 2 teaspoons vanilla extract
  • 2 ยฝ Cups unbleached flour

  • 1 teaspoon salt
  • 1 Cup Candy Corn
  • 1 Cup unsalted butter (softened, for frosting)
  • 2 Cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • ยผ teaspoon salt (for frosting)

Instructions

  1. Preheat your oven to 350ยฐF.
  2. Line a 9×13 baking dish with parchment paper and lightly coat it with cooking spray.
  3. Beat together the softened butter and cream cheese using an electric mixer until well combined.
  4. Gradually add the sugar and mix until incorporated.
  5. Add in the eggs and vanilla extract, mixing until smooth.
  6. Sift in the flour, baking powder, and salt, then mix until a dough forms.
  7. Fold in the candy corn gently, ensuring it’s evenly distributed throughout the dough.
  8. Pour the batter into your prepared pan, spreading it out evenly.
  9. Bake for 30 to 35 minutes, or until the edges turn a light golden brown.
  10. Remove from the oven and let it cool completely.
  11. Prepare the frosting by mixing together the butter, powdered sugar, vanilla, and salt until smooth and creamy.
  12. Spread the frosting evenly across the cooled cookie bars.
  13. Sprinkle additional candy corn on top, if desired, then cut into squares or bars.
