Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cucumber, julienned
- 1 avocado, sliced
- 1/2 cup imitation crab meat, shredded
- 2 sheets nori, cut into strips
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a pot, then bring it to a boil.
- Reduce the heat to low, cover, and let it simmer for 18-20 minutes or until the water is fully absorbed.
- Remove from heat and let it sit covered for another 10 minutes.
- Whisk together the rice vinegar, sugar, and salt until fully dissolved.
- Incorporate this mixture into the warm sushi rice gently.
- Divide the seasoned sushi rice among serving bowls.
- Top each bowl with julienned cucumber, sliced avocado, shredded imitation crab, and nori strips.
- Serve with soy sauce, pickled ginger, and wasabi on the side.
Notes
Store leftover rice and toppings separately in airtight containers. Best enjoyed fresh.
