- 8 oz penne pasta
- 1 lb andouille sausage, sliced
- 1 cup bell peppers, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Parmesan cheese for serving
- Chopped parsley for garnish
Instructions
- Cook the penne pasta according to the package instructions. Drain it and set aside.
- Heat the olive oil in a large skillet over medium heat. Add in the sliced andouille sausage and cook until it’s browned and aromatic. Remove and set aside.
- Toss in the chopped onions, bell peppers, and minced garlic into the same skillet; sauté until the onions become translucent.
- Pour in the chicken broth and heavy cream, then stir in the Cajun seasoning, salt, and pepper. Bring to a simmer.
- Add the cooked pasta and sausage back into the skillet. Toss everything together to coat in the creamy sauce.
- Cook for a few more minutes until heated through. Serve hot, garnished with Parmesan cheese and chopped parsley.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For a dairy-free version, use coconut milk instead of heavy cream.
