Description

A rich and creamy pasta dish featuring andouille sausage, vibrant bell peppers, and a blend of Cajun spices, perfect for quick weeknight dinners.


Ingredients

  • 8 oz penne pasta
  • 1 lb andouille sausage, sliced
  • 1 cup bell peppers, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Parmesan cheese for serving
  • Chopped parsley for garnish

Instructions

  1. Cook the penne pasta according to the package instructions. Drain it and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add in the sliced andouille sausage and cook until it’s browned and aromatic. Remove and set aside.
  3. Toss in the chopped onions, bell peppers, and minced garlic into the same skillet; sauté until the onions become translucent.
  4. Pour in the chicken broth and heavy cream, then stir in the Cajun seasoning, salt, and pepper. Bring to a simmer.
  5. Add the cooked pasta and sausage back into the skillet. Toss everything together to coat in the creamy sauce.
  6. Cook for a few more minutes until heated through. Serve hot, garnished with Parmesan cheese and chopped parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For a dairy-free version, use coconut milk instead of heavy cream.
