Ingredients

- 1 cup rice
- 2 cups water or broth
- 1 cup corn (fresh, frozen, or canned)
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped parsley (for garnish, optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine the rice and water or broth in a pot, and bring to a boil over high heat.
- Reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Add the corn during the last five minutes of cooking.
- Let it sit covered for another five minutes after removing from heat.
- Stir in the butter until melted, and season with salt and pepper to taste.
- Fluff the rice with a fork and serve, garnished with parsley if desired.
