Description

A comforting dish combining the heartiness of rice with the sweetness of corn, perfect for busy weeknights or impressing guests.


Ingredients

Scale
  • 1 cup rice
  • 2 cups water or broth
  • 1 cup corn (fresh, frozen, or canned)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped parsley (for garnish, optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rice and water or broth in a pot, and bring to a boil over high heat.
  3. Reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  4. Add the corn during the last five minutes of cooking.
  5. Let it sit covered for another five minutes after removing from heat.
  6. Stir in the butter until melted, and season with salt and pepper to taste.
  7. Fluff the rice with a fork and serve, garnished with parsley if desired.
