Description

A delightful twist on traditional meatballs, these Buffalo Chicken Meatballs are seasoned with bold flavors and are perfect for game day or quick weeknight meals.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup buffalo wing sauce
  • 1/4 cup celery, finely chopped
  • 1/4 cup carrots, finely chopped
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground chicken, breadcrumbs, buffalo wing sauce, celery, carrots, egg, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Mix everything together until well combined.
  4. Form the mixture into small meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, or until they are cooked through and golden brown.
  6. Serve with additional buffalo sauce or your favorite dipping sauce.

Notes

For a gluten-free option, use gluten-free breadcrumbs. You can also substitute ground turkey or lean beef for the ground chicken.
