- 2 lbs Russet Potatoes
- Vegetable Oil or Canola Oil
- Salt
- 1 tbsp Potato Starch or Cornstarch (optional)
- 1.5 lbs Boneless, Skinless Chicken Breasts or Thighs
- 1/2 Cup All-Purpose Flour
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Black Pepper
- 1/2 tsp Salt
- 1/2 Cup Buffalo Wing Sauce
- 2 tbsp Butter
- For the Cheese Sauce: 4 tbsp Butter
- 4 tbsp All-Purpose Flour
- 2 Cups Milk
- 8 oz Shredded Cheddar Cheese
- Salt and Pepper (to taste)
- Toppings: Ranch or blue cheese dressing, chopped green onions or chives, crumbled blue cheese, diced tomatoes, pickled jalapeños, chopped celery
Instructions
- Wash the russet potatoes thoroughly. Peel if desired, then cut them into 1/2 inch thick fries for even cooking.
- Soak the fries in cold water for at least 30 minutes (up to 2 hours) to reduce starch.
- Drain and thoroughly dry the fries with paper towels.
- Heat vegetable oil in a heavy pot or deep fryer to 325°F (160°C).
- Fry the potatoes in batches for 4-6 minutes until softened but not browned. Remove and let cool.
- Increase oil temperature to 375°F (190°C) and fry the potatoes again for another 2-3 minutes until golden and crispy. Immediately season with salt.
- Cut the chicken into bite-sized pieces (about 1-inch cubes).
- Mix flour, paprika, garlic powder, onion powder, black pepper, and salt in a shallow bowl. Dredge the chicken pieces in the mixture.
- Fry the chicken in hot oil for about 3-5 minutes per side until cooked through.
- Melt butter in a saucepan, add the buffalo sauce, and stir until well combined.
- Toss the fried chicken in the buffalo sauce until evenly coated.
- Make the cheese sauce by melting butter, whisking in flour, and gradually stirring in milk until thick. Remove from heat and stir in cheddar cheese until melted.
- Assemble by arranging the crispy fries on a platter, spoon buffalo chicken over them, and drizzle with cheese sauce. Top with desired toppings.
Notes
Serve hot for the best taste. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
