Description

A simple yet delightful side dish that transforms ordinary carrots into a sweet and buttery treat, perfect for any meal.


Ingredients

  • 2 lbs. carrots (peeled and uniformly sliced)
  • ¼ cup brown sugar (packed, dark or light)
  • 3 tbsps. butter (unsalted, melted)
  • 1 tsp. olive oil (light tasting)
  • ¼ tsp. salt
  • ¼ tsp. cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and slice the carrots into uniform pieces, about 1 inch in length.
  3. Par-boil the carrots for 5 minutes in boiling water.
  4. Drain and rinse the carrots with cold water.
  5. Combine melted butter, olive oil, and brown sugar in a shallow bowl. Add salt and cinnamon (if using) and mix to form a glaze.
  6. Toss the carrots in the glaze to coat thoroughly.
  7. Transfer the carrots to a baking dish, spreading them out evenly.
  8. Bake for 10 minutes, then remove and toss the carrots again. Return to the oven for an additional 5 minutes.
  9. Let them cool for a couple of minutes before serving.

Notes

Garnish with fresh chopped parsley for added color and freshness. Store leftovers in an airtight container in the refrigerator for 3 to 5 days.
