- 2 lbs. carrots (peeled and uniformly sliced)
- ¼ cup brown sugar (packed, dark or light)
- 3 tbsps. butter (unsalted, melted)
- 1 tsp. olive oil (light tasting)
- ¼ tsp. salt
- ¼ tsp. cinnamon (optional)
Instructions
- Preheat your oven to 400°F.
- Peel and slice the carrots into uniform pieces, about 1 inch in length.
- Par-boil the carrots for 5 minutes in boiling water.
- Drain and rinse the carrots with cold water.
- Combine melted butter, olive oil, and brown sugar in a shallow bowl. Add salt and cinnamon (if using) and mix to form a glaze.
- Toss the carrots in the glaze to coat thoroughly.
- Transfer the carrots to a baking dish, spreading them out evenly.
- Bake for 10 minutes, then remove and toss the carrots again. Return to the oven for an additional 5 minutes.
- Let them cool for a couple of minutes before serving.
Notes
Garnish with fresh chopped parsley for added color and freshness. Store leftovers in an airtight container in the refrigerator for 3 to 5 days.
