Ingredients

- 1 cup rice (preferably white or brown)
- 4 cups broth (chicken, vegetable, or beef)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetables (carrots, peas, or spinach)
- 1 cup lean protein (chicken, tofu, or beans)
- Salt and pepper to taste
- A handful of fresh herbs (parsley or cilantro) for garnish
Instructions
- In a large pot, heat a bit of oil over medium heat.
- Add the chopped onion and minced garlic. Sautรฉ until softened, about 3-4 minutes.
- Stir in the rice and toast it slightly for about a minute.
- Pour in the broth and bring the mixture to a boil.
- Reduce heat, cover, and let simmer according to the rice package instructions (15-20 minutes for white rice).
- In the last 5 minutes of cooking, add in your choice of vegetables and protein.
- Season with salt and pepper to taste.
- Once cooked, garnish with fresh herbs and serve warm.

Feel free to swap out the proteins and vegetables based on what you have available. This recipe is incredibly adaptable!
