Ingredients

- 1 cup quinoa
- 2 cups water
- 2 cups broccoli florets
- 1 large apple, diced
- 1/2 cup toasted almonds (or walnuts)
- 1/2 cup toasted pecans
- 1/4 cup honey (or maple syrup as a vegan alternative)
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
Instructions
- Rinse and cook quinoa: Rinse the quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water, bring to a boil, then lower heat and cover to simmer for about 15 minutes.
- Steam broccoli:While quinoa cooks, steam the broccoli florets for 3-4 minutes until tender-crisp.
- Combine ingredients: In a large bowl, mix cooked quinoa, steamed broccoli, diced apple, toasted almonds, and pecans.
- Make the dressing: In a small bowl, whisk together honey, Dijon mustard, salt, and pepper.
- Toss and serve: Drizzle the dressing over the salad mixture and toss to combine. Serve chilled or at room temperature.
