- 2 chicken breasts
- 4 ounces Boursin cheese (herb-flavored or garlic & fine herbs)
- 1 cup spinach, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: garlic powder, herbs de Provence for added flavor
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the Boursin cheese with the chopped spinach until well mixed in a bowl.
- Slice a pocket into each chicken breast, ensuring not to cut all the way through.
- Stuff each pocket generously with the cheese and spinach mixture.
- Season the outside of the chicken breasts with salt, pepper, and any additional spices you wish to use.
- Heat the olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and juices run clear.
- Let the chicken rest for a few minutes before serving to lock in the juices.
Notes
For extra flavor, consider adding garlic powder or herbs de Provence. This recipe can be easily adapted with different cheeses like feta or goat cheese.
