Description

Delicious cookies inspired by the classic Boston cream pie, filled with whipped cream and topped with rich chocolate.


Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whipped cream
  • 1 cup dark chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking powder, and salt in a separate bowl.
  6. Incorporate the dry ingredients into the wet mixture until just combined.
  7. Drop dough onto ungreased baking sheets, spacing them about two inches apart.
  8. Bake for 12-15 minutes or until edges are lightly golden.
  9. Cool the cookies completely on a wire rack.
  10. Sandwich whipped cream between two cookies.
  11. Melt dark chocolate chips with vegetable oil until smooth.
  12. Drizzle or dip the filled cookies in the chocolate glaze and let set before serving.
