Description

Delicious Blueberry Crumb Bars featuring a buttery, crumbly topping and a sweet-tart blueberry filling, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups blueberries (fresh or frozen)
  • 1/4 cup blueberry jam
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Add the flour, rolled oats, and salt to the butter mixture, mixing until crumbly.
  4. Press the remaining mixture firmly into the bottom of the prepared pan, reserving 1 cup for topping.
  5. Combine blueberries with blueberry jam and spread evenly over the crust.
  6. Sprinkle the reserved crumb mixture atop the blueberry layer.
  7. Bake for 30-35 minutes, or until the top is golden brown.
  8. Allow to cool before cutting into squares.
  9. Serve with a generous scoop of vanilla ice cream.

Notes

For a festive twist, serve with a scoop of lemon sorbet. Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for a week.
