- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups blueberries (fresh or frozen)
- 1/4 cup blueberry jam
- Vanilla ice cream (for serving)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Cream the softened butter and sugar together until light and fluffy.
- Add the flour, rolled oats, and salt to the butter mixture, mixing until crumbly.
- Press the remaining mixture firmly into the bottom of the prepared pan, reserving 1 cup for topping.
- Combine blueberries with blueberry jam and spread evenly over the crust.
- Sprinkle the reserved crumb mixture atop the blueberry layer.
- Bake for 30-35 minutes, or until the top is golden brown.
- Allow to cool before cutting into squares.
- Serve with a generous scoop of vanilla ice cream.
Notes
For a festive twist, serve with a scoop of lemon sorbet. Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for a week.
