Description

A warm and comforting blueberry cobbler with pockets of creamy delight from cream cheese and a nutty flavor from brown butter.


Ingredients

  • 2 cups fresh blueberries
  • 1/2 cup unsalted butter (brown butter)
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 4 ounces cream cheese (cut into small pieces)
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the unsalted butter in a saucepan over medium heat until it turns a deep golden brown, then remove from heat and let cool slightly.
  3. Whisk together the sugar, flour, baking powder, and salt in a large mixing bowl until well combined.
  4. Pour in the milk and the browned butter, mixing gently until just combined.
  5. Grease a baking dish (about 8×8 inches) and pour the batter into it, spreading evenly.
  6. Scatter the fresh blueberries over the batter and tuck the cream cheese pieces in between the blueberries.
  7. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the cobbler cool slightly before serving, best enjoyed warm with a scoop of vanilla ice cream on top.
