- 1 ½ cups all-purpose flour
- ½ cup granulated sugar (for crust)
- ½ cup unsalted butter, melted
- ¼ teaspoon salt
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups fresh blueberries
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- Make the crust by mixing the flour, sugar, melted butter, and salt until crumbly, then pressing it into the bottom of the prepared pan.
- Prepare the filling by beating the softened cream cheese until smooth, then adding the powdered sugar and vanilla, followed by the eggs one at a time until well combined.
- Assemble the bars by pouring the cream cheese mixture over the crust evenly.
- Prepare the blueberry topping by cooking the blueberries, cornstarch, lemon juice, and sugar in a saucepan over medium heat until thickened.
- Bake the assembled bars for 40-45 minutes or until the filling is set and the edges are lightly golden.
- Cool completely before slicing into squares.
Notes
Serve chilled or at room temperature. For added flair, dust with powdered sugar or serve with whipped cream.
