Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter in a mixing bowl. Mix until well-coated, then press into greased mini muffin tins.
- Beat together softened cream cheese, sugar, vanilla extract, and lemon juice in a separate bowl until smooth.
- Fold in the blueberries gently, ensuring they are evenly distributed.
- Spoon the cheesecake mixture over the crusts in the muffin tins, filling each one generously.
- Bake for about 15-20 minutes or until the centers are set.
