Description

A delightful dish combining rich salmon with creamy spinach and Parmesan, perfect for quick dinners or special occasions.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 4 oz cream cheese (softened)
  • 2 tbsp blackening seasoning
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté the spinach in a skillet over medium heat until wilted, about 3 minutes. Set aside to cool.
  3. Combine the cooled spinach with softened cream cheese and grated Parmesan in a mixing bowl.
  4. Pat the salmon fillets dry and coat both sides generously with blackening seasoning.
  5. Create pockets in the salmon fillets using a sharp knife for stuffing.
  6. Stuff each pocket with the spinach and cheese mixture.
  7. Lay the stuffed salmon on the prepared baking sheet and drizzle lemon juice over the top.
  8. Bake for 15-20 minutes or until the salmon is flaky and cooked through.
  9. Serve garnished with lemon slices or fresh herbs, if desired.
