- 2 tbsp blackening seasoning
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Sauté the spinach in a skillet over medium heat until wilted, about 3 minutes. Set aside to cool.
- Combine the cooled spinach with softened cream cheese and grated Parmesan in a mixing bowl.
- Pat the salmon fillets dry and coat both sides generously with blackening seasoning.
- Create pockets in the salmon fillets using a sharp knife for stuffing.
- Stuff each pocket with the spinach and cheese mixture.
- Lay the stuffed salmon on the prepared baking sheet and drizzle lemon juice over the top.
- Bake for 15-20 minutes or until the salmon is flaky and cooked through.
- Serve garnished with lemon slices or fresh herbs, if desired.
