Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup rice (any variety)
  • 1 pound sausage (smoked or your choice)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: cilantro, lime wedges, avocado

Instructions

  1. Start by browning the sausage in a large pot over medium heat until fully cooked.
  2. Add the diced onion and minced garlic to the pot, cooking until softened and fragrant.
  3. Mix in the rice and black beans along with the broth, cumin, and paprika. Don’t forget to season with salt and pepper!
  4. Bring everything to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is tender.
  5. Fluff the rice with a fork, and serve hot, garnished with cilantro, lime wedges, or avocado if desired.

Notes

For best flavor, use a mix of sausage types or substitute with a plant-based version. Try adding diced bell peppers or chili powder for a kick!
