A delicious and quick recipe for cheesy Black Bean Quesadillas, perfect for busy weeknights or gatherings.

- 1 cup cooked black beans
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sour cream or salsa for serving (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 3 to 5 minutes.
- Combine the cooked black beans, sautéed vegetables, and half of the shredded cheese in a mixing bowl.
- Place a tortilla in the skillet. Sprinkle some of the black bean mixture on half of the tortilla and top it with additional cheese.
- Fold the tortilla over and cook for 2 to 3 minutes on each side until golden brown and the cheese is melted.
- Repeat with the remaining tortillas, adding more oil to the skillet as needed.
- Cut each quesadilla into wedges and serve warm with sour cream or salsa if desired.
Notes
For a creamy texture, try blending cheeses or adding jalapeños for some heat. Store leftovers in an airtight container for up to three days or freeze for two months.
