Description

A delicious and quick recipe for cheesy Black Bean Quesadillas, perfect for busy weeknights or gatherings.


Ingredients

  • 1 cup cooked black beans
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large tortillas
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream or salsa for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 3 to 5 minutes.
  2. Combine the cooked black beans, sautéed vegetables, and half of the shredded cheese in a mixing bowl.
  3. Place a tortilla in the skillet. Sprinkle some of the black bean mixture on half of the tortilla and top it with additional cheese.
  4. Fold the tortilla over and cook for 2 to 3 minutes on each side until golden brown and the cheese is melted.
  5. Repeat with the remaining tortillas, adding more oil to the skillet as needed.
  6. Cut each quesadilla into wedges and serve warm with sour cream or salsa if desired.

Notes

For a creamy texture, try blending cheeses or adding jalapeños for some heat. Store leftovers in an airtight container for up to three days or freeze for two months.
