Description

A quick and delicious Kung Pao Shrimp recipe featuring marinated shrimp, vibrant vegetables, and crunchy peanuts in a spicy sauce.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, chopped
  • 1/2 cup peanuts
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, chopped
  • 1 tablespoon sesame oil
  • Red pepper flakes to taste

Instructions

  1. Combine shrimp with soy sauce, rice vinegar, and cornstarch; marinate for 15 minutes.
  2. Heat vegetable oil in a pan over medium-high heat.
  3. Add marinated shrimp to the pan; cook until pink (2-3 minutes), then remove and set aside.
  4. In the same pan, add bell pepper, garlic, ginger, and green onions; stir-fry for 2-3 minutes.
  5. Return cooked shrimp to the pan with peanuts.
  6. Drizzle with sesame oil and sprinkle with red pepper flakes.
  7. Stir everything together and cook for an additional minute.
  8. Serve hot, ideally over rice.

Notes

For a healthier option, consider using low-sodium soy sauce and swapping peanuts for cashews if desired.
