- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup salami, diced
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the tortellini: Start by boiling water in a large pot. Cook the cheese tortellini according to package instructions until al dente. Drain and set aside to cool.
- Mix the veggies: In a large bowl, add the cooled tortellini along with the cherry tomatoes, cucumber, black olives, salami, mozzarella cheese, red onion, and fresh basil.
- Prepare the dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until well combined.
- Combine: Pour the dressing over the salad mixture and gently toss until all the ingredients are well coated.
- Chill: Cover and refrigerate the salad for at least 30 minutes before serving to let those delicious flavors meld together.
