Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini: Start by boiling water in a large pot. Cook the cheese tortellini according to package instructions until al dente. Drain and set aside to cool.
  2. Mix the veggies: In a large bowl, add the cooled tortellini along with the cherry tomatoes, cucumber, black olives, salami, mozzarella cheese, red onion, and fresh basil.
  3. Prepare the dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until well combined.
