Description

A healthier twist on the classic mac and cheese, featuring roasted cauliflower coated in a creamy cheese sauce.


Ingredients

  • 1 head cauliflower, cut into small bite-sized pieces
  • 2 Tbsp. olive oil
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. salt
  • 1 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1 1/2 cup heavy whipping cream
  • 4 ounces cream cheese, cut into small cubes
  • 1 cup shredded cheddar cheese
  • 1 cup gruyere cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 tsp. paprika (optional for topping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cauliflower: Place the cauliflower pieces on a baking sheet lined with foil or parchment paper. Drizzle with olive oil, sprinkle salt and pepper, and coat well.
  3. Bake for 15-20 minutes, or until the cauliflower is tender and some edges are caramelized.
  4. Create the cheese sauce: In a large pot set over low heat, combine the heavy cream and cream cheese. Whisk until the cream cheese is melted.
  5. Add the remaining cheeses: Stir in the cheddar, gruyere, and Monterey Jack until melted and combined.
  6. Incorporate spices: Add the garlic powder, onion powder, and any additional spices to the sauce. Whisk until smooth, then remove from heat.
  7. Combine: Gently fold in the roasted cauliflower pieces, ensuring it’s all beautifully coated in that cheesy goodness.
  8. Serve immediately and enjoy your creamy comfort! A sprinkle of paprika on top adds a charming touch.
