- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 24 oz cream cheese (softened)
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 2 ripe peaches (sliced)
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- Prepare the crust by combining graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Mix until well combined, then press this mixture firmly into the bottom of the springform pan.
- Beat the softened cream cheese in a large bowl until smooth. Gradually add the sugar and vanilla, mixing well before incorporating each of the three eggs one by one. After everything is combined, fold in the sour cream until it’s fully integrated.
- Pour the cheesecake filling over the prepared crust, smoothing it out evenly. Arrange the sliced peaches and fresh berries on top, creating a beautiful pattern.
- Bake in the preheated oven for 50–60 minutes, or until the center sets completely. Allow it to cool at room temperature before refrigerating for at least 4 hours (or overnight, if possible).
- Serve chilled, optionally with extra berries or a dollop of whipped cream.
Notes
Make sure cream cheese is at room temperature to avoid lumps. Don’t skip cooling before refrigerating; it helps set the texture.
