Description

A delightful dessert that combines fluffy cake layers, creamy mascarpone, and fresh berries—perfect for any celebration!


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy in a large mixing bowl.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking powder, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture while alternating with the milk. Mix until just combined.
  7. Divide the batter evenly among the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Beat the mascarpone cheese, heavy cream, and powdered sugar together until soft peaks form.
  10. Place one layer on a serving plate and spread a layer of mascarpone cream on top, followed by a layer of mixed berries.
  11. Repeat the process with the second layer, then add the final cake layer on top.
  12. Spread the remaining mascarpone cream over the top and sides of the cake, garnishing with additional berries.
  13. Chill in the refrigerator before serving for the best flavor and texture.

Notes

Best served with vanilla ice cream or a dollop of whipped cream. Store leftovers in an airtight container in the refrigerator.
