- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 1 tablespoon vanilla extract

- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- Cream together the softened butter and sugar until light and fluffy in a large mixing bowl.
- Beat in the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture while alternating with the milk. Mix until just combined.
- Divide the batter evenly among the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Beat the mascarpone cheese, heavy cream, and powdered sugar together until soft peaks form.
- Place one layer on a serving plate and spread a layer of mascarpone cream on top, followed by a layer of mixed berries.
- Repeat the process with the second layer, then add the final cake layer on top.
- Spread the remaining mascarpone cream over the top and sides of the cake, garnishing with additional berries.
- Chill in the refrigerator before serving for the best flavor and texture.
Notes
Best served with vanilla ice cream or a dollop of whipped cream. Store leftovers in an airtight container in the refrigerator.
