- 1 cup mixed bell peppers, diced
- 1 cup green peas (fresh or frozen)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 4 tablespoons BBQ sauce
- 2 tablespoons vegetable oil
- 1 tablespoon chili oil
- 1 tablespoon sesame seeds
- Fresh chives, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large pan over medium heat until shimmering.
- Add the diced chicken and sauté until browned and cooked through, about 5-7 minutes.
- Toss in the mixed bell peppers and green peas, sautéing for 2-3 minutes until tender yet crisp.
- Push the chicken and veggies to one side of the pan and scramble the beaten eggs on the other side.
- Mix the cooked rice into the pan along with the soy sauce and BBQ sauce; stir and cook for an additional 2-3 minutes.
- Drizzle with chili oil, then sprinkle with sesame seeds and chopped chives before serving.
Notes
