  • 2 cups cooked rice (day-old rice works best for texture)
  • 1 lb chicken breast, diced
  • 1 cup mixed bell peppers, diced
  • 1 cup green peas (fresh or frozen)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 4 tablespoons BBQ sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon chili oil
  • 1 tablespoon sesame seeds
  • Fresh chives, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large pan over medium heat until shimmering.
  2. Add the diced chicken and sauté until browned and cooked through, about 5-7 minutes.
  3. Toss in the mixed bell peppers and green peas, sautéing for 2-3 minutes until tender yet crisp.
  4. Push the chicken and veggies to one side of the pan and scramble the beaten eggs on the other side.
  5. Mix the cooked rice into the pan along with the soy sauce and BBQ sauce; stir and cook for an additional 2-3 minutes.
  6. Drizzle with chili oil, then sprinkle with sesame seeds and chopped chives before serving.
