- 9 graham crackers, crushed
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 ripe bananas, sliced
- 1/4 cup rum
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the crushed graham crackers with the melted butter in a mixing bowl.
- Press the mixture firmly into the bottom of a springform pan to form the crust.
- Beat the softened cream cheese, brown sugar, and vanilla together until silky smooth.
- Whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Toss the sliced bananas with cinnamon and a splash of rum in a separate bowl.
- Layer the cinnamon-rum bananas over the cheesecake filling in the crust.
- Bake in the preheated oven for 50-60 minutes or until set in the middle.
- Cool the cheesecake, then refrigerate for at least 4 hours before serving.
Notes
For added flavor, consider topping with powdered sugar or caramel sauce and serving with vanilla ice cream.
