Ingredients

Scale
  • 9 graham crackers, crushed
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 ripe bananas, sliced
  • 1/4 cup rum
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the crushed graham crackers with the melted butter in a mixing bowl.
  3. Press the mixture firmly into the bottom of a springform pan to form the crust.
  4. Beat the softened cream cheese, brown sugar, and vanilla together until silky smooth.
  5. Whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  6. Toss the sliced bananas with cinnamon and a splash of rum in a separate bowl.
  7. Layer the cinnamon-rum bananas over the cheesecake filling in the crust.
  8. Bake in the preheated oven for 50-60 minutes or until set in the middle.
  9. Cool the cheesecake, then refrigerate for at least 4 hours before serving.

Notes

For added flavor, consider topping with powdered sugar or caramel sauce and serving with vanilla ice cream.
