Ingredients

- 15.25 oz box white cake mix (heat treated)
- 8 oz block of cream cheese (softened)
- 1 teaspoon vanilla extract
- ½ cup crushed pineapple (very well drained)
- ¾ cup chopped walnuts
- 1 ripe banana (sliced)
- 8 oz of white candy coating
- ½ cup chocolate melting wafers
- Rainbow sprinkles
- Stemmed maraschino cherries (for garnishing)
Instructions
- Prepare a large cookie sheet with parchment paper and set it aside.
- Cream together the white cake mix, softened cream cheese, and vanilla extract until fully combined.
- Fold in the crushed pineapple, chopped walnuts, and banana slices until evenly distributed.
- Scoop the mixture and roll it into 1 to 1½ inch balls using your palms.
- Arrange the truffle balls on the cookie sheet and refrigerate for 1 hour.
- Prepare the candy coating in a microwave-safe bowl, heating at 50% power for 1 minute, stirring, and then heating in 30-second intervals until melted.
- Dip each truffle ball into the melted candy coating, ensuring it is fully covered.
- Place each truffle back on the parchment paper.
- Chill for another 30 minutes to set.
- Melt chocolate melting wafers as previously described and dollop over each truffle.
- Add a stemmed cherry and some sprinkles on top before serving.
Notes
Heat treating the cake mix is essential for safety. You can swap chopped walnuts for pecans if desired.
