Description

A delightful fusion of soft, buttery scones and the classic sweetness of banana bread, perfect for breakfast or an afternoon treat.

Ingredients

Scale
  • 2 ripe bananas
  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup cold butter, cubed
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • Cinnamon sugar for topping
  • Brown sugar for glaze

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mash the ripe bananas and set them aside for later.
  3. Whisk together the flour, sugar, baking powder, salt, and cinnamon in another bowl.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the mashed bananas, along with the milk, egg, and vanilla extract, mixing until just combined.
  6. Knead the dough on a floured surface and form it into a circle about 1 inch thick.
  7. Cut the dough into wedges and place them on a baking sheet lined with parchment paper.
  8. Sprinkle the tops with cinnamon sugar and bake for 15-20 minutes, or until they turn golden brown.
  9. Mix brown sugar with a little water for the glaze and drizzle over the warm scones once they’re out of the oven.
  10. Let them cool slightly, serve, and enjoy!

Notes

For a healthier twist, feel free to use whole wheat flour or swap in almond milk for a dairy-free option. Try different spices or mix-ins for creative variations!
