- 2 cups all-purpose flour

- 1/2 cup cold butter, cubed

- 1 egg
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 400°F (200°C).
- Mash the ripe bananas and set them aside for later.
- Whisk together the flour, sugar, baking powder, salt, and cinnamon in another bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the mashed bananas, along with the milk, egg, and vanilla extract, mixing until just combined.
- Knead the dough on a floured surface and form it into a circle about 1 inch thick.
- Cut the dough into wedges and place them on a baking sheet lined with parchment paper.
- Sprinkle the tops with cinnamon sugar and bake for 15-20 minutes, or until they turn golden brown.
- Mix brown sugar with a little water for the glaze and drizzle over the warm scones once they’re out of the oven.
- Let them cool slightly, serve, and enjoy!
Notes
For a healthier twist, feel free to use whole wheat flour or swap in almond milk for a dairy-free option. Try different spices or mix-ins for creative variations!
