Ingredients

  • 1 tbsp extra virgin olive oil
  • 2 ripe avocados, mashed
  • Grated zest of 1 lime
  • Juice of 1 lime
  • Salt to taste
  • Freshly chopped dill
  • 1/2 red onion, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the salmon fillets in a baking dish.
  3. Season each fillet generously with salt, black pepper, garlic powder, paprika, and cayenne pepper.
  4. Drizzle the olive oil over the salmon, ensuring each fillet is coated.
  5. Bake in the oven for 12-15 minutes or until the salmon flakes easily with a fork.
  6. While the salmon is cooking, mash the avocados in a separate bowl.
  7. Mix in the lime zest, fresh lime juice, salt, and chopped dill until well combined.
  8. Once the salmon is ready, generously top each fillet with the avocado mash and finish with a sprinkle of chopped red onion.
