Description

Crispy and healthy Baked Parmesan Zucchini Slices are a delightful snack or side dish, perfect for any occasion.


Ingredients

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis into 1/4-inch rounds.
  3. Beat the eggs in a bowl until frothy and set aside.
  4. Mix together the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper in another bowl.
  5. Dip each zucchini slice into the beaten eggs, then coat with the breadcrumb mixture.
  6. Lay the coated slices on the baking sheet and spray lightly with olive oil.
  7. Bake for 20-25 minutes until golden brown and crispy.
