Ingredients

Scale
  • 1 pound cooked pasta (penne or fusilli)
  • 8 oz cooked salmon
  • 1 block of feta cheese
  • Olive oil (for drizzling)
  • Seasoning to taste (salt, pepper, herbs)
  • 1 10 oz container of cherry tomatoes
  • 3 cloves of garlic, minced

  2. Prepare a medium baking dish with the feta cheese in the center, surrounded by cherry tomatoes and minced garlic.
  3. Season with olive oil, salt, pepper, and herbs. Bake for 25-30 minutes until soft and blistered.
  4. Flake the salmon into bite-sized pieces.
  5. Cook the pasta according to package instructions, then drain.
  6. Combine the baked feta and tomatoes with the pasta and flaked salmon until well mixed.
  7. Serve immediately, garnished with fresh herbs if desired.

Notes

Use high-quality feta for the best results. Feel free to swap salmon for zucchini for a vegetarian option.
