Description

A vibrant and nutritious meal featuring tender salmon, zesty lime, and smoky chili, perfect for busy weeknights or impressing guests.

Ingredients

Scale
  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Mix olive oil, lime juice, chili powder, garlic powder, salt, and pepper in a small bowl until well combined.
  3. Place the salmon fillets on a baking sheet lined with parchment paper and brush the seasoning mixture generously on top.
  4. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
  5. Serve the baked salmon over cooked rice or quinoa, topped with black beans, sliced avocado, and fresh cilantro.

Notes

For a slightly spicier kick, add a pinch of cayenne pepper to the seasoning mix. Marinating the salmon for 30 minutes enhances flavor.
