Instructions

  1. Start by toasting the slices of bread to your preferred level of crispiness.
  2. While the bread is toasting, bring a pot of water to a gentle simmer.
  3. Carefully crack in the eggs and poach for about 3-4 minutes for a perfectly runny yolk.
  4. In a bowl, mash the ripe avocado with a fork.
  5. Add a squeeze of lemon juice, salt, and pepper to enhance the flavor.
  6. Once the toast is golden and ready, spread the avocado mixture evenly over each slice.
  7. Remove the poached eggs from the water and gently place one egg on top of each slice of avocado toast.
