Instructions
- Start by toasting the slices of bread to your preferred level of crispiness.
- While the bread is toasting, bring a pot of water to a gentle simmer.
- Carefully crack in the eggs and poach for about 3-4 minutes for a perfectly runny yolk.
- In a bowl, mash the ripe avocado with a fork.
- Add a squeeze of lemon juice, salt, and pepper to enhance the flavor.
- Once the toast is golden and ready, spread the avocado mixture evenly over each slice.
- Remove the poached eggs from the water and gently place one egg on top of each slice of avocado toast.
- Drizzle with olive oil and sprinkle with red pepper flakes or your choice of toppings.
