Description

A refreshing and vibrant salad combining succulent shrimp, creamy avocados, and juicy mangoes, perfect for summer gatherings.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Olive oil (optional for added richness)

Instructions

  1. In a skillet heated to medium, add the shrimp. Cook for 3-4 minutes on each side or until the shrimp turns pink and opaque. After cooking, remove from heat and let the shrimp cool.
  2. In a large mixing bowl, combine the cooled shrimp, diced avocados, diced mango, finely chopped red onion, and cilantro.
  3. Drizzle the mixture with the juice of two limes and, if using, a dash of olive oil. Season with salt and pepper to taste.
  4. Gently toss everything together to mix without mashing the avocados. Serve immediately for the best flavor.

Notes

To prevent avocados from browning in leftovers, cover tightly with plastic wrap. Best enjoyed fresh but can be stored in the refrigerator for up to one day.
