Ingredients

  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • Zest of 1 lemon

Instructions

  1. Blend the flour, salt, and cold butter until the mixture resembles coarse crumbs.
  2. Incorporate water gradually until a dough forms. Knead until smooth, then wrap in plastic and refrigerate for at least one hour.
  3. Preheat your oven to 375ยฐF (190ยฐC).
  4. Roll the dough out very thinly and cut it into circles.
  5. Combine ricotta cheese, powdered sugar, vanilla extract, and lemon zest in another bowl. Mix until smooth.
  6. Place a spoonful of the ricotta filling on each pastry circle, then fold the edges to form a shell shape.
  7. Brush the tops with egg wash for a golden color while baking.
  8. Bake for 25-30 minutes or until golden brown.
  9. Allow to cool before serving.
