- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons unsalted butter, softened
- Additional flour for dusting
Instructions
- Combine mashed potatoes, flour, baking powder, and salt in a large mixing bowl.
- Add softened butter and mix until a slightly sticky dough forms.
- Turn out the dough onto a floured surface and knead gently for a couple of minutes.
- Divide the dough into equal portions and flatten each into a round, about half an inch thick.
- Heat a skillet over medium heat and add a little butter.
- Cook the potato farls for about 5 minutes on each side until golden brown.
- Transfer to a paper towel to drain excess butter.
Notes
For best results, use smooth and creamy mashed potatoes. Pair farls with a hearty breakfast or serve with butter and jam.
