Description

Delightful potato cakes, crispy on the outside and fluffy inside, perfect for any meal of the day.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter, softened
  • Additional flour for dusting

Instructions

  1. Combine mashed potatoes, flour, baking powder, and salt in a large mixing bowl.
  2. Add softened butter and mix until a slightly sticky dough forms.
  3. Turn out the dough onto a floured surface and knead gently for a couple of minutes.
  4. Divide the dough into equal portions and flatten each into a round, about half an inch thick.
  5. Heat a skillet over medium heat and add a little butter.
  6. Cook the potato farls for about 5 minutes on each side until golden brown.
  7. Transfer to a paper towel to drain excess butter.

Notes

For best results, use smooth and creamy mashed potatoes. Pair farls with a hearty breakfast or serve with butter and jam.
