- 1 Tbsp vegetable oil
- 16 oz pulled rotisserie chicken
- 1 small red onion, diced
- 2/3 cup BBQ sauce
- 12–14 mini bagels
- 2 cups shredded Monterey Jack cheese
- 4 oz grated Asiago cheese
- 1 cup ranch dressing
- 1/2 cup BBQ sauce
Instructions
- Preheat a medium-sized cooking pan over medium heat and add the vegetable oil.
- Toss in the diced red onion and sauté until translucent.
- Break up your pulled rotisserie chicken into smaller pieces and add it to the pan.
- Mix the onions and chicken together until heated through, about 2-3 minutes, then pour in the BBQ sauce and mix to meld the flavors.
- Preheat your oven to 350°F (175°C) and lightly grease a large cookie sheet.
- Cut the mini bagels in half and arrange them cut side up on the greased cookie sheet.
- Spoon the BBQ chicken mixture onto each bagel half, adding a couple of tablespoons per piece.
- Top each bagel bite with Monterey Jack cheese followed by the grated Asiago.
- Bake in the preheated oven for 7-10 minutes, or until the cheese is bubbly and golden brown.
- Whisk together the ranch dressing and remaining BBQ sauce while the bagel bites are baking.
- Drizzle the baked bagel bites with the BBQ ranch dressing before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
