Description

Delightful Apricot Shortbread Bars blend the richness of shortbread with the tangy sweetness of apricot jam, perfect for any occasion.


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup apricot jam
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the flour and salt until just combined, reserving about 1 cup for topping.
  4. Press the remaining crumb mixture into the bottom of the prepared pan.
  5. Spread the apricot jam evenly over the crust.
  6. Sprinkle the reserved crumb mixture over the top of the jam layer.
  7. Bake for 30-35 minutes, or until golden brown.
  8. Allow the bars to cool before slicing into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze individually wrapped for up to 3 months. Add zest or nuts for extra flavor.
