- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup apricot jam
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Mix in the flour and salt until just combined, reserving about 1 cup for topping.
- Press the remaining crumb mixture into the bottom of the prepared pan.
- Spread the apricot jam evenly over the crust.
- Sprinkle the reserved crumb mixture over the top of the jam layer.
- Bake for 30-35 minutes, or until golden brown.
- Allow the bars to cool before slicing into squares.

Store leftovers in an airtight container at room temperature for up to 3 days or freeze individually wrapped for up to 3 months. Add zest or nuts for extra flavor.
