Description

Ingredients

  • 1 cup apricot preserves
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter and sugar until the mixture is light and fluffy.
  3. Add the egg yolk and vanilla extract, mixing until just combined.
  4. Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the butter mixture, stirring until a cohesive dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick. Cut the rolled dough into squares.
  6. Spoon a dollop of apricot preserves into the center of each square. Fold the corners over the filling to create a pillow shape, and gently press to seal.
  7. Space the cookies on a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the cookies are lightly golden.
  9. Allow the cookies to cool before dusting them with powdered sugar for a beautiful finish.
