Instructions
- Preheat your oven to 350°F (175°C).
- Cream the softened butter and sugar until the mixture is light and fluffy.

- Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the butter mixture, stirring until a cohesive dough forms.

- Spoon a dollop of apricot preserves into the center of each square. Fold the corners over the filling to create a pillow shape, and gently press to seal.
- Space the cookies on a baking sheet lined with parchment paper.

- Allow the cookies to cool before dusting them with powdered sugar for a beautiful finish.
