  2. Prepare your apples by peeling and chopping them into small pieces.
  3. Whisk together the flour, baking powder, salt, and ground cinnamon in a medium bowl.
  4. Cream the softened butter with the granulated sugar and brown sugar in a large bowl until fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gradually mix in the dry ingredients until just combined. Gently fold in the chopped apples.
  7. Spread the batter evenly in the prepared baking dish and smooth the top with a spatula.
  8. Combine the sugar and cinnamon in a small bowl, then sprinkle this mixture generously over the batter.
  9. Bake for 30–35 minutes or until golden brown and a toothpick inserted into the center comes out mostly clean.
