- Preheat your oven to 350°F (175°C), and grease a 9×13-inch baking dish.
- Prepare your apples by peeling and chopping them into small pieces.
- Whisk together the flour, baking powder, salt, and ground cinnamon in a medium bowl.
- Cream the softened butter with the granulated sugar and brown sugar in a large bowl until fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually mix in the dry ingredients until just combined. Gently fold in the chopped apples.
- Spread the batter evenly in the prepared baking dish and smooth the top with a spatula.
- Combine the sugar and cinnamon in a small bowl, then sprinkle this mixture generously over the batter.
- Bake for 30–35 minutes or until golden brown and a toothpick inserted into the center comes out mostly clean.
- Allow the bars to cool completely before slicing them into squares.
