Description

A delightful dessert combining rich mascarpone cheese with fresh apples, enclosed in a buttery crumble.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond meal
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 3 cups mascarpone cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups fresh apples, peeled and sliced
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Combine the flour, almond meal, brown sugar, granulated sugar, salt, and baking powder in a mixing bowl. Add the softened butter and vanilla extract, mixing until the texture resembles coarse crumbs.
  3. Press half of this crumble mixture into the bottom of your prepared springform pan to form a crust.
  4. Beat the mascarpone cheese with the eggs and granulated sugar until smooth, then stir in the remaining vanilla.
  5. Pour the mascarpone mixture over the crust in the pan carefully.
  6. Arrange the sliced apples beautifully over the mascarpone layer, then sprinkle the remaining crumble mixture on top.
  7. Dust cinnamon generously over the topping for that warm, comforting flavor.
  8. Bake your cake for 50-60 minutes, or until the top is a lovely golden brown and a toothpick inserted in the center comes out clean.
  9. Allow it to cool before carefully removing it from the pan, then it’s ready to serve!

Notes

Pair with whipped cream or a scoop of vanilla ice cream for extra indulgence. Store leftovers in an airtight container for up to five days or freeze for up to three months.
