- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 4 cups apples, peeled and sliced
- 1 tsp cinnamon
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1/2 cup oats
- 1/2 cup butter, cold
Instructions
- Preheat your oven to 325°F (160°C).
- Combine the graham cracker crumbs, melted butter, and sugar in a bowl. Press this mixture firmly into the bottom of a springform pan to create your crust.
- Beat the softened cream cheese with sugar and vanilla until smooth and creamy. Add the eggs one at a time, incorporating each well before the next. Pour this mixture over the prepared crust.
- Toss the peeled and sliced apples with cinnamon and layer them evenly atop the cheesecake mixture.
- Mix the flour, oats, brown sugar, and cold butter in a bowl using your fingertips until crumbly. Sprinkle this mixture generously over the apples.
- Bake in the preheated oven for 55-65 minutes or until the center is set and bounces back when touched.
- Cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
Best served chilled, optionally topped with warm caramel sauce or whipped cream.
