- 1 large egg
- 1 cup apple cider
- 1 cup apple butter

- Bourbon caramel buttercream or brown sugar cream cheese icing for filling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a small bowl until well combined.
- Cream the softened butter and brown sugar together until light and fluffy in a large mixing bowl.
- Add in the egg, followed by the apple cider and apple butter. Mix until incorporated.
- Fold the dry ingredients into the wet mixture, stirring gently until just combined.
- Drop rounded tablespoons of dough onto the lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden and the center is springy to the touch.
- Allow cookies to cool completely on a wire rack.
- Spread half of the cookies with bourbon caramel buttercream or brown sugar cream cheese icing and top with another cookie.
- Roll the edges in cinnamon sugar to coat for an extra sweet touch.
