Description

Delightful fall treats that combine soft, spiced cookies with a luscious filling, perfect for any autumn occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 cup apple cider
  • 1 cup apple butter
  • Cinnamon sugar for coating
  • Bourbon caramel buttercream or brown sugar cream cheese icing for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a small bowl until well combined.
  3. Cream the softened butter and brown sugar together until light and fluffy in a large mixing bowl.
  4. Add in the egg, followed by the apple cider and apple butter. Mix until incorporated.
  5. Fold the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Drop rounded tablespoons of dough onto the lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are lightly golden and the center is springy to the touch.
  8. Allow cookies to cool completely on a wire rack.
  9. Spread half of the cookies with bourbon caramel buttercream or brown sugar cream cheese icing and top with another cookie.
  10. Roll the edges in cinnamon sugar to coat for an extra sweet touch.
