Description

Delightful muffins swirled with apple butter, perfect for breakfast or brunch.


Ingredients

  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 0.5 teaspoon Salt
  • 0.75 cup Granulated Sugar
  • 1 teaspoon Cinnamon
  • 1 cup Milk
  • 0.5 cup Vegetable Oil
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 0.5 cup Apple Butter
  • 0.25 cup Brown Sugar
  • 0.5 cup Flour
  • 0.25 cup Cold Butter
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  3. Combine the granulated sugar, milk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Mix the apple butter with the brown sugar and additional cinnamon in a separate bowl for the swirl.
  6. Fill each muffin cup two-thirds full with the batter, then add a spoonful of apple butter mixture on top and swirl it through.
  7. Mix together 0.5 cup flour, 0.25 cup brown sugar, cold butter, cinnamon, and salt until crumbly and sprinkle over the muffin batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.

Notes

Serve warm or at room temperature. Store in an airtight container for up to four days or freeze for up to three months.
