Description

Ingredients

  • 2 cups almond flour
  • 1 cup powdered sugar
  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1 cup heavy cream
  • 1/2 cup toasted almonds, chopped (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Combine the almond flour and powdered sugar in a mixing bowl.
  3. Start beating the egg whites in another bowl. Once foamy, add the cream of tartar and continue whipping until soft peaks form.
  4. Gradually add in the granulated sugar while whipping until stiff peaks form.
  5. Gently fold the almond flour mixture into the egg white meringue, adding vanilla extract for flavor.
  6. Use a piping bag to pipe small rounds onto your prepared baking sheet.
  7. Bake for 15-20 minutes until crisp and lightly golden.
  8. Allow the meringues to cool completely on the sheet.
  9. Whip the heavy cream until soft peaks form and fold in chopped toasted almonds.
  10. Assemble cookies by spreading the almond cream between two meringue cookies.
